MAKES 4 | EASY | 30 MINUTES
Things you’ll need:
120g Butter or margarine, softened
500g Light brown sugar
4 Large eggs
2 Tablespoons lemon juice
2 Teaspoons Bicarb of Soda
2 Tablespoons apricot jam
600g Cake flour, sifted
1 x 440 g Pie Apples
250ml Boiling water
250ml Melted butter or margarine
10ml Vanilla essence
50ml Amarula (optional)
Make the batter by creaming the butter and sugar together until pale and fluffy. Add the eggs one at a time. Beat in the lemon juice, bicarbonate of soda and apricot jam. Fold in the flour alternating with the milk.
Preheat the 30cm Electric Frying Pan on Medium, pour the batter into the frying pan and scatter over the pie apples. Place lid and allow to steam and cook for 30 -40 minutes until a skewer inserted in the middle comes out clean.
To make the sauce: Combine all the sauce ingredients together in a saucepan and bring to the boil, reduce heat and simmer for 5 minutes. Remove from heat and allow to cool slightly.
To serve, pour syrup over the pudding and serve with custard or ice cream.
