Chicken Pieces and Veggies in the Convection Oven

SERVES 2 | EASY | 50 MINUTES

Things you’ll need:

POTATOES & TOMATOES
8 Baby potatoes, halved
3 Garlic cloves, unpeeled and lightly crushed
Olive oil, to drizzle
15ml Butter
Salt, to taste
300g Baby tomatoes 

CHICKEN
10 Chicken pieces
Handful fresh thyme 

GREEN VEGETABLES
350g Green beans and asparagus
15ml Butter

Pitted green olives, to serve
Fresh basil leaves, to serve

Step 1

Set your Capri Convection Oven up according to instructions and turn to 200°C. Place your halved baby potatoes in the base of the oven, add the garlic cloves, drizzle with olive oil and add the butter. Season with salt. Cook for 15 minutes.

Step 2

After 15 minutes add your baby tomatoes to the potatoes and chicken pieces to the middle rack of the Convection Oven and top with the thyme and sprinkle with salt. Cook at 200°C for 25 minutes, then turn to 250°C and add the green veg and butter wrapped in tin foil to create a parcel to the top rack. Cook for a further 10 minutes.

Step 3

Serve the potatoes topped with the chicken, green olives and veggies alongside and garnish with fresh basil leaves.
