Christmas Pork Roll with Sage and Potatoes

SERVES 4 – 6 | EASY | 30 mins + 2 hours and 45 mins for roasting:

Things you’ll need:
1,5kg rolled pork belly roast
30ml butter, melted
Salt and freshly ground black pepper, to taste
Handful fresh sage leaves 

4 potatoes, sliced lengthways
olive oil, to drizzle
Handful fresh sage leaves

Step 1

For the pork, preheat the oven to 230°C. Place your pork in your 30cm Capri Cast Iron pot, rub with butter, salt and pepper and sage leaves and place in the oven for 10 – 20 minutes until the crackling is crunchy and golden, then turn the heat down to 180°C and roast for a further 2 hours.

Step 2

For the potatoes, place the potatoes in a roasting dish, drizzle generously with olive oil, sprinkle with sage leaves and salt and roast in the oven at 180°C alongside the pork roll until crisped and cooked through, about 45 minutes.

Step 3

Slice the pork to serve and serve alongside the potatoes.
