Things you’ll need:
500ml Cold water
195g Maize meal
125ml Fresh cream
15ml Canola oil
2 – 3 Bananas, skin on and sliced lengthways
Syrup/honey, to drizzle
Fresh strawberries, to serve
Mix the water and maize meal together in a bowl. Add the milk to your 24cm Lime Green Cast Iron pot and bring to a boil, then whisk in the water and maize meal mixture. Put the lid on the pot and simmer, stirring occasionally, until the porridge is cooked. Once cooked, stir in the remaining porridge ingredients.
For the bananas, heat the oil and butter in your 28cm Lime Green Square Griddle pan over medium heat. Place the banana halves, flesh side down, in the pan and cook for 2 – 3 minutes until charred.
Serve the porridge in bowls, topped with caramalised bananas, a drizzle of syrup/honey and fresh strawberries.
