Deep Fryer Doughnuts

Things you’ll need for the doughnuts:

385g cake flour, sieved + extra for rolling
12,5ml (2 ¼ tsp) instant dry yeast
45ml (3 tbsp) sugar
pinch salt
250ml milk, warmed
7,5ml (1 ½ tsp) vanilla essence
3 egg yolks
60ml (4 tbsp) butter, at room temperature
vegetable oil, for deep frying
Things you’ll need for the doughnuts:
125ml icing sugar
10ml (2 tsp) lemon juice
2,5ml (¼ tsp) vanilla essence
a little boiling water
few drops food colouring of your choice
sprinkles and edible flower petals to decorate (optional)


Step 1

For the doughnuts, to the bowl of the Capri Red Mixer (or if making without a mixer, to a large bowl), add the flour, yeast, sugar and salt and mix with the paddle attachment until combined (or a wooden spoon if using a bowl). Add the milk, vanilla, egg yolks and butter and combine until smooth (mix for about 3 minutes until the dough is soft and smooth, and it will be a bit sticky).

Step 2

Shape the dough into a ball and leave in a bowl (cover the bowl with cling wrap) to prove (rise) for 1 hour.


Step 3

Once the dough has risen for 1 hour, dust some flour on a work surface and line a baking tray with baking paper. Place the dough on the floured work surface and roll out with a rolling pin (use a little flour to air rolling) to a thickness of about 2cm. Using a doughnut cutter (or a large glass for the outside of the doughnut and a smaller glass to cut out the doughnut hole), cut out doughnuts. Reroll any dough offcuts and cut out to use up all the dough. Place the doughnuts on the baking sheet lined with baking paper, cover lightly with cling wrap and allow to rise for a further 30 minutes.

Step 4

Fill your Capri Deep Fryer with vegetable oil and heat to 160°C. In batches (don’t over-fill the deep fryer with doughnuts), fry your doughnuts, about 5 minutes per side and flip over to fry the other side for a further 5 minutes. Once golden and cooked through, remove from the deep fryer and drain on paper towel. Repeat until all the doughnuts are fried.

Step 5

For the icing, add the icing sugar, lemon juice and vanilla to a bowl and slowly add a little boiling water until your reach an icing consistency. Colour with a few drops of food colouring. To decorate, dip the tops of the doughnuts in the icing and decorate with sprinkles and petals.
