This flavourful and colourful dish is perfect for putting in the middle of the table and letting everyone help themselves. Our 11 Litre Convection Oven makes serving and washing up an absolute dream, so you can spend more time with your family.
SERVES 4 | EASY | 20 MINUTES
Things you’ll need:
4 x 150g Firm white fish
200g Mixed cocktail tomatoes
1 Small red onion, sliced
Small handful mixed olives
2 Tablespoons capers, drained
2 Cloves garlic crushed
1 Preserved lemon, chopped (optional)
150ml Good quality olive oil (do not substitute with sunflower oil)
Sea salt & black pepper
2 Tablespoons pesto & torn basil leaves
Wrap the fish fillets in the prosciutto and place on the baking tray of your 11 Litre Convection Oven, scatter around the red onion slices, tomatoes, olives, capers, garlic, and lemon. Drizzle with the olive oil and season.
Preheat the oven and bake for 10 – 15 minutes at 190°C or until the fish flakes easily when pressed with a fork.
To serve, garnish with dollops of pesto and torn basil leaves. Serve with cauliflower rice or a fresh baguette.
