Meat-Free Monday Noodle Bowls

Meat-Free Monday doesn’t have to be boring! Using your 30cm Lime Green Cast Iron Casserole, this clean-eating, tasty but hearty bowl of colours and flavours, can be ready in under 20 minutes.


SERVES 4 | EASY | 20 MINUTES

Things you’ll need:

1 Tablespoon vegetable oil
Assorted stir fry vegetables, such as long steam broccoli, carrot ribbons
Red pepper, sliced
4 Garlic cloves, sliced
1 Red chilli, deseeded and finely sliced (optional)
1 Bunch spring onions, sliced
400g Courgette noodles
2 Heads bok choy, quartered
2 x 150g packs marinated tofu pieces
1½ Tablespoon hoisin sauce
1 Tablespoon reduced-salt soy sauce (add extra to suit your own taste)
25g Roasted cashew nuts

Step 1

Heat the oil in your 30cm Lime Green Cast Iron Casserole.  Add the broccoli, then fry on a high heat for 5 minutes or until just tender, adding a little water if it begins to catch. Add the garlic and chilli, fry for 1 minute then toss through the spring onions, soya beans, bok choy and tofu. Stir-fry for 2-3 minutes. Add the hoisin, soy and nuts to warm through.

Step 2

Cook the noodles according to instruction on the packet. Drain and toss with the vegetables.

Step 3

Serve in bowls with extra sweet chilli sauce.
