SERVES 4 | EASY | 30 MINUTES:
Things you’ll need:
30ml (2 tbsp) milk
8 slices bread (we used ciabatta)
butter, to fry
salt, to taste
250g streaky bacon, fried until crispy in your Capri non-stick frying pan
4 fried eggs (fried in your Capri non-stick frying pan)
mustard, to spread
avo slices, to serve.
For the French toast, place 4 eggs in a bowl with the milk and whisk until smooth and just combined. Place a knob of butter in your Capri non-stick frying pan over medium heat. Briefly dip 3 slices of bread in the egg mixture, then place in the frying pan and fry until golden on both sides, about 3 minutes per side. Remove the bread from the pan and repeat until all the bread is fried, adding a little more butter as you go.
Season your French toast with a little salt. Fry your bacon in the same frying pan until crispy, then fry 4 eggs.
To assemble the stacks, place a layer of mustard on a slice of French toast, top with crispy bacon, cheese slices and another slice of French toast. Heat up slightly in a warm oven to melt the cheese, then serve with a fried egg on top and with avo slices on the side.
Serve with a fried egg on top of the toast. Serve with slices of avocado on the side. Now. Eat!
